Remember my last blogpost about my homemade almond milk and bliss balls? Take a look, make your own almond milk and cook a nice rice pudding wit it like I did.
I never had a creamier rice pudding than I had with my homemade almond milk. I added the hemp seeds for a crunchy effect and it worked perfectly. Sweeten and spice it up with your favorite ingredients and enjoy it with a nice berry sauce.
Also a very simple thing: Just heat up frozen berries of your choice – I used raspberries – add some water some a saucy texture and add optional sweetness.
I really like the fact that you can enjoy rice pudding as a warm bowl and also as a chilled dessert, snack or even breakfast 😉 Everything is possible and everything is allowed!!! Make your own rules, so if you feel like having something that is a dessert for most people for breakfast, well then have it for breakfast. There are times I have pizza for breakfast – who cares? 😀
Ingredients for 2:
150 g round-grain Rice
50 g Hemp Seeds
600 ml Almond Milk – take a look here for homemade Almond Milk
2 tsp Vanilla
1 tsp Orange Zest
1/2 tsp ‘Sweet Love‘ from Just Spices (optional)
liquid stevia for sweetness
2 hands full of frozen Raspberries
optional Acai Powder, e.g. from Berioo
Heat up the almond milk with the rice and hemp seeds until it cooks. Now reduce the heat at least to half, put a lid on the pot and let it simmer for about 30 minutes. Once the rice pudding is creamy and the rice is soft enough, add the other ingredients. Mix the pudding well and enjoy just like that – warm and creamy – or let it cool down. Or top it with some nice berry sauce. For a nice raspberry sauce just heat up the frozen raspberries in a pot and add about 3 tbsp water. Let it simmer until you have an even sauce and add some agave if you like some extra swestness.
