This is definitely one of my favorite dishes of all time. It´s done in 40 minutes in case you´re using whole grain rice like I did. If you have parboiled rice, it will only take about 15 minutes, because cooking the rice is seriously the thing that takes most of the time.
Also it´s super simple with ingredients you get everywhere. No need in going to a fancy expensive Asian grocery store or some thing like that.
It only needs an onion, curry/turmeric powder, a can of coconut milk (full-fat), a can of tangerines, 2 bananas, some cashews and oil and spices of your choice. Well an rice of course, but if you would like to try the recipe with mie or glass noddles, I´m sure it fits perfectly as well.
And finally: a pan and a pot (or two pots), two plates, two spoons and two hungry peeps 😉
You don´t even have to use turmeric, if you don´t have that in your kitchen and you don´t to spend money for it – in comparison to other spices, it´s pretty expensive, but the healthy benefit is enormous. Take a look here for details.

If you are a vegan-newbie and miss some dishes which are not vegan, don´t be afraid of experimenting. Try to replace the animal products with plantbased ones and see if it´s works! Sometimes it´s worth the try and you´re wondering why you didn´t try that before 😉
Ingredients for 2:
150g whole grain Rice
1 big onion
1 tsp Turmeric
a pinch of yellow Curry Powder
1 can Coconut Milk (full-fat)
1 can Tangerines
Oil for the pan
Salt, Asian Spices, e.g. Coriander, Ginger, Cumin, herbs
Cook the rice in water as stated. Dice the onion and slice the banana. Heat up some oil in a pan and steam the onion on medium heat for a couple of minutes. Add the turmeric and curry powder and let it simmer for a while. Extinguish the powdered onion with the coconut meat (you won´t need the coconut water for this recipe, but I´m sure you find a way to use it for your next smoothie or oatmeal) from the can and mix everthing until it´s a creamy sauce. Add the tangerines and finally the sliced banana and serve it with the rice and some cashews on top.
