Coffee or tea time between lunch and dinner is such a great time because I make myself a little snack and enjoy a freshly brewed cup of tea or coffee. I don´t always have something sweet, I also love to make myself a platter of veggies sticks or fruit slices – but you know, sometimes it just has to be cake, pudding or icecream 😀
One of my new favourite way of enjoying Nicecream is definitely this one: Banoffee Vashew Icecream!!! And with that a simple and healthy turmeric latte or some of you might know it as ‘Golden Latte / Golden Milk’
Nothing beats that at the moment!
Why Banoffee? Well, there is a frozen banana in it of course and I also added a teaspoon of instant coffee powder and a teaspoon of ‘Kaffekuss‘ from Just Spices. If you don´t have this spice blend, don´t worry. Feel free to skip it completely or replace it with some vanilla sugar, cocoa powder & cinnamon.
To get an even creamier texture, I let cashews soak overnight, blended them the next day and added the mousse to the Banoffe Cream. Finished with banana slices and some cocoa nibs: AWWWWWESOME ❤
Same with the turmeric latte. I was inspired by Lynn from @heavenlynnhealthy to try her golden milk, but changed some ingredients – so here is how I made it:
Just use your favorite kind of plant milk, I use soy or almond milk, both are perfect for this latte. Add turmeric, maca, ginger, some agave and 1 espresso et voila: perfect drink in the afternoon.
Ingredients for 1 Bowl Icecream:
1 frozen Banana
150 g Cashews
2-3 tbsp Plant Milk
1 tsp Coffee Powder (Instant)
1 tsp ‘Kaffeekuss‘ from Just Spices (optional)
Ingredients for 1 Turmeric Latte:
200-250 ml Plant Milk
1 tsp Turmeric
1/2 tsp Maca, e.g. from Berioo
1/4 tsp Ginger
1 tbsp Agave
Icecream: Let the cashews soak in water for 3-4 hours – I always do this overnight.
Once the cashews are soft enough, blend them together with one frozen banana and plant milk until you have a icecreamy texture. Add coffee powder and if you have this available also ‘Kaffeekuss’ and mix everything. In case you don´t have ‘Kaffeekuss’, you can also add some vanilla, cocoa and cinnamon.
Turmeric Latte: Heat up the milk and slowly add turmeric, maca, ginger and agave. Keep stirring to avoid clusters. Prepare one espresso, fill the spiced milk in a glass or a mug and the espresso on top.
