Another recipe I loved when I wasn´t vegan, when I wasn´t even vegetarian, which I just veganized because I didn´t want to forgo this yumminess.
My mother used to cook it with minced meat and cheese on top and of course the white sauce wasn´t vegan, but there were still many veggies in it and every time we ate this at home I freaked out because it was and actually still is my favourite.
There is clearly not need of meat or any animal products in this recipe because there are several great things to replace them with or you can just leave them away.
This recipe is completely free from any meat-replacer like tofu but please feel free to add some soy or saitan products if you want to.
It´s also very easy to replace some of the veggies if you don´t like one of those I used. And if you can´t live without cheese on your casserole, feel free to add some vegan mozzarella (or any other vegan cheese) – I don´t need it because the yeast flakes bring a slight cheese-flavour.

Ingredients for 4 Persons:
1 package Cannelloni
1 can of Pizza Tomatoes
2 small Onions
2-3 gloves of Garlic
2 small Capsicums
100 g frozen spinach
3 tbsp Soy Sauce
1 tbsp White Wine Vinegar
2 tbsp Tomato Paste
70 g vegan Margarine
70 g Flour
600 ml Plant Milk
4 tbsp Yeast Flakes
Salt, Pepper, ginger, Nutmeg, Herbs (e.g. from Hartkorn or Just Spices)
Heat up the can of diced Pizza Tomatoes. In the meantime dice the onions & garlic, the zucchini, the capsicums and the carrots as small as possible an add everything to the tomato sauce. Also add the frozen spinach, soy sauce, vinegar, tomato paste, salt, pepper, ginger and herbs of your choice and let everything simmer while you keep stirring from time to time.
In another pot heat up the margarine until it´s completely melted and add the flour bit by bit. Once you have a thick texture add the milk also bit by bit. Add some salt, pepper, nutmeg and finally the yeast flakes and let it simmer for about 3 minutes.
Preheat your oven to 180 degrees (C). Place a first layer (1/3) of your white sauce into a casserole before you place the cannelloni in it. Your cannelloni-filling should be ready by now, so start fill it into your cannellonis and place them side by side into the casserole. Top it with another layer of white sauce (use the rest) and bake it for about 30 minutes.
