I know there are soooooo many sweet recipes out there, especially when you look at the delicious Instagram foodporn with all it´s oatmeals, chia puddings and chocolate tempatations.
And I know here are also more sweet than savoury recipes, that´s why I want to add more lunch and dinner (or snack) dishes which a not sweet. There are a few on my recipe list and here is another that is very easy and delicous.
By the way: I love having some wraps, tortillas, tacos or whatever you´d like to call them.
You don´t need to stick a certain recipe you can just fill it with whatever you have in the fridge and still have a delicous and healthy meal. And you can have a warm filling like this or you just add some salad and cold sliced veggies 🙂
Ingredients for 2 Wraps:
2 Tortilla Wraps
1/2 small Zucchini
3 Cherry Tomatoes
1 small Capsicum
5 small Mushrooms
Hand full of sliced Leek
2 tsp vegan Tomato Spread
Sea Salt, Pepper & ‘Kräuterquarkgewürz’ from Just Spices
tomato paste (optional)
Dice up the zucchini, tomatoes, the capsicum, the onion and the mushrooms. Make sure you wash the sliced leek. Preheat a pan or a pot and add the tomatoes. Let them simmer for a while until you have a tomatoe sauce. Then add the onions and let it simmer for another 2 minutes. Little by little add the diced veggies and keep stirring.
Finally add the vegan spread as well as salt, pepper and herbs. If you don´t have a herbal mixture like ‘Kräuterquarkgewürz’ from Just Spices, you can add some garlic, basil, parsley, dill, chive and oregano or whatever you have in your kitchen 😉
Make sure to let it simmer for another 5 minutes before you fill your tortilla wraps with it. In case your filling seems pretty too watery just add some tomato paste to thicken it.
