Here comes another round of my beloved fruit pizza.
This time with a sweet date crust and instead of using vegan cream cheese, I used soy yoghurt and mango puree. Check out my other fruit pizza recipe where I used figs and plums for the crust.
I made this one for my families Easter Breakfast because it tastes to lovely like spring and sunshine 🙂
And it doesn´t just look beautiful, everone loved it and it´s quite simple to prepare!
180 g Nuts of your choice (I used a mix that contains cashews, almonds, walnuts and hazelnuts)
150 g Natural Soy Yoghurt
Fruits of your choice like Banana, Grapes, Raspberries, Blueberries, Kiwi and Tangerines
Let the dates as well as the nuts soak in water overnight or for at least 1-2 hours.
On the next morning put everything together in a food processor and blend it until it´s a well combined crumbled paste. Spread your “dough” into a tart or cake pan after you spread some coconut oil in it and bake it for about 15 minutes at 180 degrees (C).
While the crust has to cool down a bit, prepare the yoghurt spread and the fruits of your choice. Puree the mango and mix it with the soy yoghurt. Cut and slice the fruits as you like it and top both on your crust.
