In case you want to bake something savory instead of the well known sweet bakery, you need to try this very delicious Carrot Zucchini Bread!

It´s inspired by @momsgymfood on Instagram and I just had to share this with you…

When I made it the first time, I wished I would have baked like 4 of them, because it is so delicious. It´s smooth and very healthy and also very good for kids who don´t like to eat veggies 😉
My boyfriend loves it as much as I do and we like to add some vegan spread or vegan butter with a pinch of sea salt to it – PERFECT!

Carrot-Zucchini Bread 02

Ingredients for 1 bread:

250 g Spelt Flour
50 g Buckwheat Flour
1 package of Baking Powder
100 ml Almond Milk
1 medium sized Zucchini
1 medium sized Carrot
60 g seeds (such as sunflower and pumkin seeds)
1 tsp Cane Sugar
1 tsp Sea Salt
a pinch of Pepper

Instruction:

Preheat your oven to 200 degrees (C).
Grate the zucchini as well as the carrot with a food processor or just do it yourself. Mix all the dry ingredients such as flour, baking powder, salt, sugar, pepper and your favourite seeds and add the gratet veggies while mixing. Now add the almond milk bit by bit and blend everything until it´s well combined.
Use your favourite baking form like for example a big pott and bake it for about 40 minutes. Make sure to place a bowl of water in the oven as well and cut in the dough twice.
Let it cool down before slicing it!
