Lettuce, cucumber, tomatoes, carrots, mushrooms, peppers, avocados, zucchini, aubergine, potatoes, cabbage, kale, ………..
I could continue the whole day 🙂 As much as I love to cook and bake – I also love it the raw way 😉
Especially in the summer with hot days I´m craving for a refreshing salad with fruit or veggies (or both :D)
And the best part: You don´t really need a recipe for a good salad, because you just use everything you really like.
Here is a little example with is also a great way to take it with you to work
Ingredients for 1-2 Persons:
about 5 leaves of Romana Salad
1 tbsp Olive Oil
2 tsp lemon juice
1 big Tomatoe
1 small Bell Pepper
Decorations: 1/2 Avocado, Cucumber Curls, Lime Slices, Pomegranate Seeds
Wash all your veggies with cold water. Cut your Romana leaves into bite-sized pieces for the first layer. Add olive oild, 1 tsp lemon juice, some salt and pepper and mix everything. Place your first layer in your jar and continue with your next layer.
The second layer is a Apple-Carrot-Salad. Grate the apple and the carrots, add 1 tsp lemon juice and mix everything until the ingredients are evenly spread. Now place it in your jar on your Lettuce-Layer. You can decorate it with some slices of a lime like I did if you want to.
Now it´s time for the third layer. Dice the tomatoe, the bell pepper and one half of an avocado, add some salt and pepper and top the salsa on your Apple-Carrot-Salad. I sliced some mushrooms to decorate this third layer.
For the fourth and last layer dice the mushrooms and close up your jar with it.
